I think that because the low weight and especially the low weight over the nose, and the fact that the weels are more centered is the reason this works quite well in a corner.
The problem you have with a normal car is that the front is quite heavy, a racecar has a 50/50 weight distribution, that means there's quite some weight that needs to be shifted in another direction, when doing so allot of weight leans on one of the two front wheels, and that makes it harder to corner because it loses grip when changing direction.
In this case the weight is shifted to the rear wheel on the outside of the corner giving that more grip when it needs it. The front wheels are in the center, so they always make almost the same amount of contact with the road no matter if you are in a corner or not, thats because the car pivots on its center axis.
In theory its an awesome idea, and it looks like it also works in reality.
